Cheesy Apple Hotcakes with Maple and Bacon

Ingredients

  • 1 extra large egg
  • ¾ cup milk
  • 1 granny smith apple, grated
  • ⅓ cup grated COON® Cheddar
  • 1 cup plain flour
  • ½ tsp baking powder
  • ½ tsp picked thyme leaves
  • Salt flakes
  • Crispy bacon, maple syrup, sliced apple and spinach leaves, for serving

Method

  1. Whisk together the egg and milk. Add the apple and cheese mixing well.
  2. Stir in the flour, baking powder, thyme and salt. Mix until just combined.
  3. Pour approx. ¼ cup measures into a pre-heated oiled frying pan. Cook for several minutes each side until golden. Set aside to keep warm whilst cooking remainder of batter.
  4. Serve hotcakes with a side of bacon, drizzle of maple and some apple and spinach leaves.
